Maddock, despite his diminutive size, became known as one of the most clinical finishers in the Premiership during a long spell with Bath. Born in Christchurch, Maddock learned his trade at the Crusaders and represented the Super Rugby side between 2002 and 2004. He took the Super 12 title in his maiden season, scoring three tries in the process.

His form for the Crusaders led to a New Zealand Maori call up in 2003 for their tour of England and he excelled, scoring eight tries in eight games. In the summer of 2004, Maddock joined Bath, where he stayed until the end of the 2009-10 season. A fans' favourite, Maddock turned out for Bath on 96 occasions in the league and ended his last season as the top try-scorer.

During Maddock's time at Bath the club won their first trophy, the European Challenge Cup, since their Heineken Cup glory in 1998. After leaving Bath, Maddock signed for Treviso. However, after just one season with the Magners League side, Premiership champions Saracens announced his signing for the 2011-12 season.
